As you can see, this cake is not a lie. Although, for all you know, to the left is just a plate of delicious white chocolate frosting that just so happens to look like cake… but there is cake underneath it all, I promise. Two layers, even!
I was so eager / nervous to dish the cake out to my lovely new colleagues that I forgot to take a picture of the beautiful red inside. Whoops! But that just means I get to make another one tomorrow, right?
The other day I had decided upon baking some nectarine and brown sugar cupcakes however, upon closer examination, one nectarine had decided that he did not want to come to the party and so he spoiled it for the rest. In other words, it had gone off, started growing mould, and had shared its germs with the rest… and we all know that mouldy fruit does not make for good cupcakes.

Since little ol’ New Zealand began daylight saving at the end of September, it has become increasingly apparent that summer is definitely on its way. After walking to deliver some of these cupcakes to a girlfriend, I was blown away by how warm the weather had become already. If I had been any less tired, I definitely would have pulled out my bikini and headed straight to the nearest beach, that is how awesome the day was. Instead, all I could think about as I made my way home, was how perfect a berry cupcake would be.
Oreos – ‘America’s favorite cookie’… more like my favourite cookie. I have been meaning to bake something with Oreos since forever ago, and since I promised cupcakes to my wifey for helping me set up this site, I thought what better chance than now?
If there was ever a cupcake to die for, this could well be it. Okay, that might be a slight exaggeration, but it really was quite fantastic. I fell in love with this recipe immediately as it called for Oreos in both the cupcake and the frosting… how could you simply say no to that?
On Saturday night I was lucky enough to receive a bag full of lemons from my lovely wifey, Laura, which I was pretty excited about. I absolutely love lemon; it adds a beautifully zesty kick to everything and anything. Okay, maybe not quite everything and anything, but you catch my drift.
One of my favourite lemon recipes is a super delicious loaf that I really ought to post on here, but the loaf had to wait, there were new (and cuter) territories to be explored… lemon cupcakes, of course! I bet you are totally surprised right now.
This Saturday was my first night attending ‘Popcornocalypse’, a movie night / pj party with some friends. I was rather excited upon being invited as I realised this was an opportunity for two great things; the first being a chance to wear my favourite pyjamas which may or may not happen to be a onesie (no judging – they really are just so comfortable) and secondly, a chance to bake some cute popcorn cupcakes… I may also have taken this brownie and tripled the recipe as well as baking another two batches of cupcakes (which you will see in the next few days). Suffice to say, it was almost enough to feed a small army.
Apricot cupcakes with white chocolate buttercream frosting… sounds amazing, does it not? These cupcakes came to be after a dear friend, Armen, encouraged me to experiment more… with baking, of course. He asked if I had ever tried apricot and as soon as he did, I knew that we could be on to a winner.
I know I probably say this about a lot of fruits, but apricots have got to be one of my all-time favourites. I love cute and small they are, how easy they are to eat, and how delicious they taste.
