I was so eager / nervous to dish the cake out to my lovely new colleagues that I forgot to take a picture of the beautiful red inside. Whoops! But that just means I get to make another one tomorrow, right?

After walking to deliver some of these cupcakes to a girlfriend, I was blown away by how warm the weather had become already. If I had been any less tired, I definitely would have pulled out my bikini and headed straight to the nearest beach, that is how awesome the day was. Instead, all I could think about as I made my way home, was how perfect a berry cupcake would be.

If there was ever a cupcake to die for, this could well be it. Okay, that might be a slight exaggeration, but it really was quite fantastic. I fell in love with this recipe immediately as it called for Oreos in both the cupcake and the frosting… how could you simply say no to that?

The Little Red Tart Caramel Cupcakes with Vanilla Buttercream FrostingThis Saturday was my first night attending ‘Popcornocalypse’, a movie night / pj party with some friends. I was rather excited upon being invited as I realised this was an opportunity for two great things; the first being a chance to wear my favourite pyjamas which may or may not happen to be a onesie (no judging – they really are just so comfortable) and secondly, a chance to bake some cute popcorn cupcakes… I may also have taken this brownie and tripled the recipe as well as baking another two batches of cupcakes (which you will see in the next few days). Suffice to say, it was almost enough to feed a small army.

These cupcakes came to be after a dear friend, Armen, encouraged me to experiment more… with baking, of course. He asked if I had ever tried apricot and as soon as he did, I knew that we could be on to a winner.

I know I probably say this about a lot of fruits, but apricots have got to be one of my all-time favourites. I love cute and small they are, how easy they are to eat, and how delicious they taste.
