From a quick glance at my blog, you might be able to tell that I like berries and fresh, summer fruit… who doesn’t?

Not only are they full of delicious flavour, they are bursting with colour and make a fabulous addition to any baking.

I am a huge fan of using fresh fruit in my buttercream in order to give it that bright yet natural pop of colour. Continue reading

Rich Chocolate Cupcakes with Raspberry Buttercream Frosting The Little Red TartHappy Valentine’s Day!

Whilst I do think February the 14th has become quite the over-commercialised Hallmark holiday, I do adore the sweet little treats that pop up.

Valentine’s Day is about love and for me, love is baking and then sharing it with others.

The Little Red Tart Spiced Fruit Mince Cupcakes with Brandy Buttercream FrostingIf there is one thing I have been lately, it is a busy bee.

As we get closer to Christmas, everything in life seems to get just that little more chaotic. And by little, I mean a lot.

I could bore you with the details, but I think I will spare you for tonight. Although I may just let you in on a little something further down the track, it is suuuuuuper exciting.

Peach & Brown Sugar Cupcakes with Boiled Peach Buttercream Frosting

The Little Red Tart Peach & Brown Sugar Cupcakes with Boiled Peach Buttercream FrostingThe other day I had decided upon baking some nectarine and brown sugar cupcakes however, upon closer examination, one nectarine had decided that he did not want to come to the party and so he spoiled it for the rest. Vanilla Cupcakes with Fresh Strawberry Buttercream Frosting

The Little Red Tart Vanilla Cupcakes with Strawberry Buttercream FrostingSince little ol’ New Zealand began daylight saving at the end of September, it has become increasingly apparent that summer is definitely on its way. After walking to deliver some of these cupcakes to a girlfriend, I was blown away by how warm the weather had become already. If I had been any less tired, I definitely would have pulled out my bikini and headed straight to the nearest beach, that is how awesome the day was. Instead, all I could think about as I made my way home, was how perfect a berry cupcake would be.

Chocolate Oreo Cupcakes with Oreo Buttercream Frosting

The Little Red Tart Chocolate Oreo Cupcakes with Oreo Buttercream FrostingOreos – ‘America’s favorite cookie’… more like my favourite cookie. I have been meaning to bake something with Oreos since forever ago, and since I promised cupcakes to my wifey for helping me set up this site, I thought what better chance than now?

If there was ever a cupcake to die for, this could well be it. Okay, that might be a slight exaggeration, but it really was quite fantastic. I fell in love with this recipe immediately as it called for Oreos in both the cupcake and the frosting… how could you simply say no to that?
